Chili Characteristic

Chili is the fruit of plants of the genus Capsicum. This includes about 20-27 species, of which five are domesticated, and the varieties of each.

The most cultivated species is the Capsicum annuum, generally known as chili, pepper, or bell pepper. Interestingly, some varieties lack the substance that gives many a characteristic sour and spicy flavor.

Chili plants are low and shrubby, although the characteristics vary significantly according to the species and variety. Some are annual, and others are perennial. 

They grow vertically and have many thin stems. Generally, they are about 1 meter high. They have simple, oval leaves with frequently pointed ends of dark or light green.

Their surface is smooth. The flowers develop alone or in groups on short stems; they are small, and most have five petals that show a white to yellow color.

After flowering, fruits with seeds of up to 15 centimeters long appear and are classified as berries: the chilies, peppers, or peppers. 

They can be elongated, pointed, round or cylindrical, broad or thin, and diverse, including red, yellow, orange, green, and purple. 

For example, Capsicum frutescens “Tabasco” develops tiny, erect, bright red chilies when ripe, while Capsicum annuum var. annum “Jalapeño” produces characteristic elongated, cylindrical, slightly bent, opaque green chilies.

Many chilies’ tart and spicy flavor are due to capsaicin, a substance present as a form of defense against mammals and other herbivorous animals. 

Birds are immune to it, and thanks to this, they can propagate the seeds. Varieties without capsaicin are known in some places as sweet peppers. 

Capsaicin is an irritant, as it causes burning when it comes into contact with the tissues and increases blood flow to the area.
