Nutritional Properties of Garlic

All bulbs are wrapped in a thin layer of slightly pink color. The plant has between 4 and 12 long, flattened leaves attached to the subway stem.

Allium sativum produces white or pink flowers that grow from individual stems up to 25 centimeters long.

Garlic (Allium sativum) belongs to the Liliaceae family. It is grown by the bulb that forms at the base of the leaves and on the disc-shaped stem.

This bulb is divided into several teeth covered with tunics that protect them. The leaves are flat and somewhat ribbed.

The garlic roots are white, very numerous, and with few branches. The stalk is disc-shaped and is located just above the roots. 

When the garlic is harvested, the disc has hardened and forms a callus below the cloves. The leaves are located above this disk and are flat and somewhat ribbed. 

The axillary buds above them swell to form the garlic cloves (between 2 and 10), surrounded by tunics (colored or not) that protect them.

 The disc, cloves, and tunics are called a garlic bulb, commonly called ahead.

From the terminal bud of the disc arises the flower stalk, at the end of which the flowers are formed, arranged in an umbel. 

Garlic is richer in proteins and carbohydrates than other vegetables and greens and has a higher energy content than other vegetables. 

The components that stand out for their contribution are minerals (potassium, phosphorus, iodine, zinc, and magnesium), vitamins (vitamins B1, B3, B6, C, and E), sulfur, or sulfur nature, and alliin.

Alliin is mainly responsible for its aroma and was discovered in the 40s of the twentieth century by the Swiss doctor and Nobel Prize winner Arthur Stoll.

This nature gives it diuretic, depurative, antiseptic, and antibacterial properties, for which it has been used for nearly 5,000 years.

Garlic is a food that can prevent cardiovascular ailments since its consumption causes vasodilation, allows a greater fluidity of the blood, and lowers the pressure while improving blood circulation. 

Its regular consumption regulates triglyceride levels by reducing lipids in the body. 

According to a study by the University of North Carolina in the United States, it is also one of the foods whose consumption reduces by 50% the risk of stomach cancer.
